This is a great recipe and you must try it to feel the nice onion-garlic-milk flavour of the spinach and how creamy it becomes after being cooked. This is the recipe of Chef John from Foodwishes and it is a side dish.

  • 200 gr Spinach
  • 100 gr Onion
  • 5 gr Garlic
  • 1 small Clove
  • 100 ml Milk
  • 150 ml Butter
  • 2 teaspoons Flour
  • Salt
  • Black pepper
  • Nutmeg


2 spans, fork, knife, squeezer, hot-plate


Direction 11. Take a span and add 1/3 of the butter (use high heat). As soon as the butter melts you should add the spinach and stir until it is mixed with the butter. Punch it down, stir it, cover it. Do that for 10 minutes and then take it out from the fire. Put it in on open window place (with western exposure) until it cools off.
Direction 22. Into another span we will prepare the souse. Add the other 2/3 of the butter and once it is melted you should add the finely diced onion on medium heat. Add the small clove just to warm in the butter and stir it with the onion for 6 minutes. Take out the clove and add the garlic and the flour. Stir and cook for 3 minutes and then add the milk. Stir it well until it becomes a beautiful souse and then after it cooked for 10 minutes on low heat, please add the salt, pepper & nutmeg and take it out from the fire.
Direction 33. Then take your spinach and press it between paper towels until it becomes completely dried. Squeeze it well and then cut it into small pices - 5 chops one side and 5 chops the other. Then add the spinach into the warm souse and stir it. You'r ready :)
